Gobi Aloo

Gobi Aloo (Potato & Cauliflower)

Aloo Gobi is a delicious dish made with potatoes, cauliflower, and blended of spices. Aloo Gobi can be served as a starter or a quick supper also ideal for buffets.

Make this authentic Indian vegetable dish at home using Mr Curry Lover’s Curry Paste, it’s very easy and quick to make.

Ingredients (Serves 4-6)

  • 2 tbl sunflower/vegatable oil
  • 2 tbl Mr Curry Lover’s Curry Paste
  • 1 large onion (finely chopped)
  • 1 cauliflower (cut into small florets)
  • 6 medium potatoes (cubed into bite sized pieces)
  • 1 hand full of fresh coriander
  • salt to taste

Instructions

  • Boil the potatoes and cauliflower until tender but not soft (approx 8-10 minutes)
  • Once the potatoes and cauliflower are ready strain/empty the water and put to one side
  • Add the 2 tbls of oil to a large pan and fry the onions until soft
  • Add 2 tbls of Mr Curry Lover’s Curry Paste to the onions and fry for 1 minute
  • Add the potatoes and cauliflower and gently mix with the onions
  • Add the fresh coriander and gently stir trying not to mash the potatoes and cauliflower
  • Taste and add salt if required and serve garnished with fresh coriander leaves

Hotter: If everyone wants it hotter add a little chilli powder when you fry the paste.  If some but not all people want it hotter add some chopped fresh chillies when served
