Takeaway style Chicken Vindaloo

Recreate that ‘restaurant/takeaway curry taste’ in your home kitchen.

Ingredients (Serves 4)

  • 1 portion of Mr Curry Lover’s Grilled Chicken
  • 2 portions of Basic Curry Sauce
  • 1 tbls sunflower/vegetable oil
  • 2 tbls extra hot chilli powder
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1 tsp madras curry powder
  • 400ml tomato pasata
  • 1/2 chopped fried onion

Instructions

Part 1 (The Marinade)

Part 2 (The Base Sauce)

Part 3 (The Curry)

  • Mix together the ground spices
  • In a saucepan or wok heat 1 tbls of oil on a medium heat
  • Add the mixed spices and quickly stir for about 30 seconds (don’t allow the spices to burn)
  • Add the tomato pasata and stir for 1 minute
  • Add the batch of Mr Curry Lover’s Base Curry and stir for 1 minute
  • Add the Chicken that you prepared earlier using the instructions from Mr Curry Lover’s Grilled Chicken and cook on a medium heat for about 5 minutes
  • Serve and enjoy

Hotter: If everyone wants it hotter add extra chilli powder to your mixed spices.  If some but not all people want it hotter add some chopped fresh chillies when served
