Vindaloo (takeaway style)

Ingredients: (enough base for 2-3 curries)

  • 1 desert spoon vegetable oil
  • 500g chicken thigh fillets cut in to bite sized pieces
  • 3 tsp hot chilli powder
  • 1/2 tsp ground coriander
  • 1/4 tsp cumin
  • 1/2 tsp madras mild curry powder
  • 400ml tomato passata (or 2 tbls tomato paste mixed with 400ml water)
  • 4 ladles Mr Curry Lover base curry

Instructions:

  • Heat the oil
  • add the chilli powder, coriander, cumin, curry powder and stir for about 15 seconds
  • add the tomato passata and continue stirring
  • add the Mr Curry Lover base curry sauce
  • add the chicken and cook on medium heat for around 15 minutes or until the chicken is fully cooked
